EGG NESTS

Separate the eggs.  Beat the egg whites until firm.  Butter an ovenproof dish and spread with the egg whites, sprinkle with 2/3 cup grated Gruyre.  Form 6 egg nests with a spoon.  Preheat the oven to 425F.  Break an egg yolk into each nest.  Coat with crme fra”che, and sprinkle with salt, pepper and the rest of the Gruyre.  Bake for about 12 minutes.
